with temp tags and LONDINIUM I you just keep the tip of the steam wand just below the surface of the milk and push the joystick open progressively so you don't blow milk everywhere

180mL of milk done in as little as 9 seconds, which is why temp tags are so useful - they stop you overdoing it

additionally they are fast to use and hygienic - no annoying and inaccurate thermometers lolling on the side of the milk jug and generally getting the way

temp tags - I'm not one for gimmicks but they have made a big difference for me
