    Teres

    Teres is Latin for 'polished smooth', and so we quickly settled on it as an accurate and fitting description for our blend of Costa Rican (only ever arabica) and Indian robusta.  Whilst we have wrung maximum performance from our 100% arabica Costa Rican offerings with very elegant notes, over time we have come to consider that the roast is slightly too 'thin', lacking some mouthfeel and not lingering long enough on the palate after you have finished the shot.

    Allow 10 days from the roast date before opening.  Rich chocolate notes if you prepare this as a filter coffee with the Swissgold filter, but when we made it up as an espresso we really took notice, being smooth without much acidity, with a rich, full taste.  Very impressive.  We stocked the Daterra yellow bourbon alongside for a while, and the Rainha Estate offering is streets ahead.     This coffee prepared as an espresso in a lever machine is one our favourite coffees.

    Now that we have hit the sweet spot for roasting this coffee we are achieving a wonderful balance in the cup. This coffee is very intolerant of sloppy roasting – slightly too high or too low and it tastes very average indeed. This coffee exhibits wonderful tobacco notes; a man’s espresso.
